Percik chicken is a dish that is famous for its sweet, spicy, and aromatic taste.
This dish consists of roasted or grilled chicken with a sauce rich in spices that gives it a unique and appetizing taste.
The spice-marinated chicken is grilled to perfection, and the sauce is drizzled repeatedly during the cooking process, imparting a layer of rich flavor to the chicken.
This dish is often served with white rice or oil rice as the main dish in certain occasions or events.
INGREDIENTS
Tell a brief story about the ingredients used to make ayam percik divided into several parts. The ingredients for the chicken are chicken, salt, sugar, chicken essence powder, chili powder, oyster sauce and a little squeeze of lime.
While the ingredients for grinding are such as shallots, ginger, galangal, garlic, live turmeric, lemongrass and hard fruits.
The ingredients for the sauce are cooking oil, ground chili, chili powder, a little tamarind water, salt to taste, Melaka sugar to taste, evaporated milk and a little corn flour mixture (to thicken the sauce if necessary).
METHOD OF PREPARATION
How to prepare the chicken, first finely grind the onion, ginger, galangal, garlic, live turmeric, hard fruit lemongrass with half-immersed water.
After that, mix the chicken with salt, sugar, chicken essence powder, chili powder, oyster sauce, half the ground ingredients and a little squeeze of lime.
After that marinate the chicken for ½ to one hour and steam the chicken for 15 minutes.
How to prepare the sauce, first heat the oil and sauté the finely ground ingredients, ground chilies and chili powder, cook until the oil breaks.
After that, add some tamarind water, salt and Malacca sugar. Continue cooking until dry.
Then pour chicken marinade sauce and evaporated milk. Add the cornstarch mixture, cook until the sauce boils and you can turn off the heat.
The way to burn it, first burn the chicken on both sides.
Then dip the chicken in the splash sauce and bake again.
After that add more sauce on top of the chicken while baking.
When it’s done roasting, take it out and it’s ready to serve.
As an additional tip, before finishing the marinating, fill the chicken first, the purpose is for the marinating spices to absorb quickly and the chicken to cook quickly.
If you like liquid gravy, you can add a little water while cooking the gravy. Have a good try.

o 3-4 hard fruits

o 1 small bowl of cooking oil
o 2 spoons of ground chili
o 1 tablespoon chili powder
o A little tamarind water
o Salt to taste
o Malacca sugar to taste
o 1 can of F&N Evaporated Milk
o A little mixture of corn flour (to thicken the sauce if necessary)
